Sour Cherry & Chocolate Chip Ice Lollies

I'm bringing sexy back... in the form of ice lollies! Who else thinks that there is something hot about Cherries & Chocolate? These two food combinations are just perfect together, these two can make all kind of desserts sexy from indulgent black forest gateau to these ridiculously delicious ice lollies. Everything we create & develop here at Pebbles Pantry HQ, are always guilt-free, nutrient dense and easy to make; this ice lolly recipe is no different! Made with only 4 ingredients, well 5 ingredients if you separate the frozen and fresh cherries.

A refreshing flavour with hints of tartness from the yoghurt and cherries, fruity and completed with the perfect amount of dark chocolate chips with every bite. An ice lolly that keeps you refreshed and satisfied! They will leave you wanting for more... I can honestly call these 'guilt-free pleasures'.

Tip: If you don't have an ice lolly mould, you can turn this cherry-licicous ice lollies into an easy sharing bark, simply pour the mixture in a 8 x 8 inch lined baking tray and freeze until soild, remove from freezer, leave to stand for a few minutes, so it can be easier to remove from the tray. Remove from the tray and break them in pieces to share.

You can also swap the frozen cherries to frozen strawberries instead to create strawberry froyo icelollies, equally YUM!

Ingredients you'll need:
  • 200g - Full-fat Greek Yoghurt
  • 100g - Frozen Cherries or 100 grams of Frozen Strawberries
  • 2 tbsp Maple Syrup
  • 25g - Chopped Dark Chocolate (Min 70%)
  • 6 fresh Cherries (Pitted & cut into pieces)
Method:
  1. Blend the greek yoghurt, frozen cherries & maple syrup using a Nutri-bullet, blender or suitable food processor, blend until it's runny and smooth.
  2. Fold in the chopped dark chocolate & the pitted fresh cherries pieces into the smoothie mix.
  3. Divide mixture between 4 ice lolly moulds.
  4. Put the ice lolly in the freezer for 4 hours or until solid.
