Paleo and Vegan Friendly Sweet Potato Gnocchi

At PPHQ, we're all about eating real food all the way, yet not having to deprive ourselves of other food that we crave from time to time, yes this does happen! However it does mean a lot of cooking trials and errors, but it's all worth it. I want to share with you a great alternative to satisfy those pasta craving days, and it is also great for making a healthy meal more substantial.

It’s super easy to make and only require four real food ingredients.

You'll need:

  1. In a large pan boil the sweet potatoes until cooked.
  2. Cut the sweet potatoes in half and scoop the sweet potatoes into a bowl and mash until smooth.
  3. Add salt, oil and half the cassava flour into the bowl with the sweet potatoes, using a spatula or your hand and keep adding the remaining cassava flour until it forms into a dough.
  4. Divide the dough into five portions, dust some cassava flour on a clean surface, then start rolling the dough and cut them into gnocchi pieces.
  5. In a large pan boil the gnocchi in salty water until they start to float, this will take about 3 - 5 minutes and drain in a colander.
  6. This step is optional, you may wish to brown the gnocchi in a pan with oil of your choice.
  7. Serve however you fancy it we love adding them to a soup, bolognese or mix it with some pesto, grated cheese and rockets or spinach.

Makes about 50 gnocchis (enough for 3-4 person), store uncooked gnocchis in an airtight container in the fridge for up to 3 days.
